Mint Chip Smoothie Bowl

Your friends will be green with envy for this antioxidant-rich superfood smoothie bowl.

1 cup Riced Cauliflower, frozen

1 sliced Banana, frozen

1/3 cup Almond Milk

1 handful Spinach

1/2 Avocado

1/2 tsp Navitas Organics Matcha Powder

1-2 Medjool dates, pitted

1/4 tsp Peppermint Extract

1/2 tsp Vanilla Extract

Pinch Sea Salt

Navitas Organics Cacao Nibs, for serving

Coconut Flakes, for serving


Place all the ingredients except for the Cacao Nibs and coconut flakes in a blender, and blend until smooth and creamy.
Add more almond milk if needed, one tablespoon at a time, being careful not to dilute the smoothie too much (you want it to be thick).
Pour into a bowl and top with Cacao Nibs and coconut flakes.
Makes 1 large serving
