Massaged Kale Salad

You can serve this salad for lunch or dinner anytime of the year‚ but it’s extra satisfying in the winter when you’re craving a hearty green bowl of goodness.

INGREDIENTS

1 large head curly Kale, finely chopped and stems removed
3 Tbsp. extra-virgin Olive Oil, divided, plus more if needed
1 large Honey Crisp Apple, diced
1 tsp. finely chopped fresh Tarragon
4 Tbsp. Navitas Organics Turmeric Tamari Almonds
2 Tbsp. Navitas Organics Goldenberries
Juice of 1 large fresh Lemon
¼ tsp. fresh Lemon Zest
Sea salt and freshly ground pepper, to taste

DIRECTIONS

In a large bowl, combine the kale and 2 Tbsp. oil, and use your hands to massage the kale until the leaves become soft and dark green, about 2 minutes. Add the apple, tarragon, Turmeric Tamari Almonds and Goldenberries. Drizzle with the lemon juice, remaining 1 Tbsp. oil, lemon zest, salt and pepper to taste. Gently toss to combine and season to taste. Add more olive oil, if needed. Serve immediately.
