Creamy Tomato-Miso Soup

Extra luxe, this creamy soup takes advantage of the mild sweetness of Goji Berries to add balanced flavor to every spoonful.

2 Tbsp Olive Oil

1 medium Yellow Onion, diced

1 28-ounce can Crushed Tomatoes

3 Tbsp Navitas Organics Goji Berries

¼ tsp Crushed Red Pepper

2½ cups Water

½ cup Navitas Organics Whole Cashew Nuts

2 Tbsp Yellow Miso Paste


Warm the oil in a heavy-bottomed pot over medium heat. Add the onions and saute for 5 minutes, to soften. Stir in the tomatoes, Goji Berries, red pepper and water, and bring to a boil.

Reduce heat to low and simmer for 30 minutes, uncovered.

Remove from heat and transfer soup to a blender. Add the Cashews and miso paste, and blend until fully smooth. Soup should have a nice thickness to it, but additional water can be added if needed to thin.

Serve warm.
