Brain-Boosting Lucuma Chia Pudding

This low-sugar recipe is loaded with fiber, plant-based protein and brain-boosting omega fats. Enjoy as a satisfying breakfast or snack!

1 Cup Unsweetened Nut Milk

2 Tbsp Raw Walnuts, chopped (reserve 1 tsp for topping)

3/4 tsp Cinnamon

1/2 tsp Vanilla

2 tsp Navitas Organics Lucuma Powder

1 tsp Maple Syrup

Pinch Sea Salt

1/4 cup Navitas Organics Chia Seeds

Seasonal fruit + Coconut Hemp Pumpkin Seeds, for topping


Add all ingredients except Chia Seeds and reserved walnuts to a high-speed blender, and blend until fully combined and creamy.
Turn off blender, add Chia Seeds, cover and turn on lowest speed just to stir and incorporate Chia Seeds while leaving them in tact. Be sure to use lowest speed possible or seeds will pulverize and can become slightly bitter. 

Leave blender on for about 2 minutes until Chia Seeds have fully absorbed the liquid and the pudding has formed. While this happens, wash and chop some fresh seasonal fruit for topping.
Pour pudding into bowl(s) and top with reserved chopped walnuts, seasonal fruit and a few Pumpkin Seeds for extra crunch and nutrients!
