Matcha truffles made with Navitas Organics Matcha Powder

You've Met Your Matcha (Balls) Recipe

These delicious whole-food matcha bites are gluten-free, vegan and paleo-friendly, and make the perfect pre-workout, post-workout, or anytime snack.

INGREDIENTS

¼ cup pumpkin seeds

½ cup raw Brazil nuts

½ cup Navitas Organics Cashews 

½ cup raw unsalted almonds

1 cup shredded unsweetened coconut

2 tbsp Navitas Organics Matcha Powder

1 scoop Navitas Organics Vanilla & Greens Essential Blend

1 tsp cinnamon

½ cup coconut oil

¼ cup coconut butter

5-6 Medjool dates, pitted

DIRECTIONS

Add pumpkin seeds, Brazil nuts, cashews and almonds to your food processor and pulse to a coarse nut meal texture.

Add in coconut shreds, matcha powder, Essential Blend and cinnamon and pulse to combine.

Add the dates and process until they are well chopped and the mixture has a consistent texture.

Melt the coconut oil and coconut butter and pour into the food processor. Process until mixture comes together, scraping down the sides as needed.

Scoop or roll into balls (you can place the mixture in the refrigerator first for 10-20 minutes to make rolling into balls easier). Place on a plate in the refrigerator to set before moving to an airtight container.

Store in the refrigerator or freezer for longer storage. Enjoy straight from the refrigerator or let them warm up a little before eating!
