Chocolate Cashew Superfood Bites Recipe

There’s no reason why chocolate can’t be healthy—all you need is the right ingredients blended together! These superfood bites are the perfect snack-on-the-go or candy dish substitute for your next gathering.

INGREDIENTS

1 cup Navitas Organics Cashew Nuts

1 cup Coconut Butter

3 Tbsp Navitas Organics Chia Seeds

3 Tbsp Navitas Organics Mulberries

3 Tbsp Navitas Organics Goji Berries

1 Tbsp Navitas Organics Maca Powder

1 Tbsp Navitas Organics Coconut Palm Sugar

1 Tbsp Navitas Organics Cacao Sweet Nibs

DIRECTIONS

Add Cashews to a food processor, blend until they become a ground powder. Add coconut butter and blend until evenly mixed with Cashews. Add all other dry ingredients: Chia Seeds, Mulberries, Goji Berries, Maca Powder and Coconut Palm Sugar. Pulse and blend until evenly mixed and turned into a sticky ‘cookie dough’ like consistency. Refrigerate for 15 minutes.

In the mean time, heat coconut oil in a small pan over low heat until melted. Add honey and stir with a fork until evenly mixed. Add Cacao Sweet Nibs and stir with a fork until evenly mixed. Remove from heat. Pour chocolate mixture into small glass dish and let sit.

Remove superfood mixture from refrigerator and begin rolling dough between your hands into small, ‘bite-sized’ round balls. Begin to dip/roll each ball into chocolate coating. Place each ball on rack, allowing any drips to fall onto wax paper before storing.

Sprinkle Coconut Palm Sugar, Cacao Sweet Nibs and/or Goji Berries over the finished bites. Store in an air-tight container in the fridge.
