Blackberry Coconut Chia Parfait

INGREDIENTS

Blackberry Layer:

1 ½ cups Coconut Milk

1/3 cup Navitas Organics Chia Seeds

1 cup Blackberries

1 tsp Navitas Organics Acai Powder

1 tsp Vanilla Extract

Pinch of Sea Salt

Banana Layer:

1 Banana, peeled and mashed

1 ½ cups Coconut Milk

1/3 cup Navitas Organics Chia Seeds

1 tsp Navitas Organics Lucuma Powder

1 tsp Vanilla Extract

Toppings (optional):

Coconut Flakes

Blackberries
Banana Slices

DIRECTIONS

For the blackberry layer: Mix all ingredients together in a bowl, mashing the blackberries with the back of a fork. The mixture will be runny, but the Chia Seeds will absorb the liquid and create a gel after you let them work their magic overnight or for about 4-5 hours.

For the banana layer: Combine the coconut milk, Chia Seeds, Lucuma and vanilla in a bowl. Stir well, then cover and refrigerate with the berry layer.

Working in layers, distribute the blackberry and banana layers between 4 small mason jars. Top with additional berries, toasted coconut and/or banana slices.

Seal the jars with their lids and keep refrigerated for up to 3 days.

Makes 4 servings
